user_4133624:LEGUME VEGETABLE BOWL
Hi everyone! Sorry about my inactivity, but I have been super busy with school and other paperwork. Like I said a while back, this school year is going to be (and has been) super busy. I have SAT’s coming up this spring (eeek!). I have no idea when I will be able to post because I will also have to work some days after school, so weekdays are going to be super busy for me. :) Don’t forget next semester, when I’m going to have an English teacher who is going to assign essays like rain lol.

Sad news (aka how this bowl was inspired): One of my favorite bowl building restaurant in my town shut down a couple of months ago :(. I used to get a bowl exactly like this often after school except without the chickpeas and tofu instead, and I topped it off with my favorite miso dressing. I was craving one of those bowls, but oh no... they’re forever cLoSeD so I decided to make one of my own! :) I just have to say... R.I.P miso sauce... you will be forever missed :(... Good news though is I took a taste of this vegan Cesar dressing and it tasted SUPER SIMILAR to the miso sauce so I put it on my leftovers for school tomorrow!! :)

I made this with almond milk since I didn’t have coconut milk, and it was still super delicious. 🍚🥭
-> This might be t.m.i. but its really important to me and I thought I would share it since there might be other girls struggling with this as well~ Today, after FIVE LONG YEARS, I got my period back!! Isn’t that insane?! I’m sorry, but I’ve gone from restricting during my eating disorder years ago to low fat but eating a lot more calories during my “recovery” to eating a low fat raw vegan diet to eating a high fat raw vegan diet to now- just ONE MONTH of eating an unrestricted, balanced diet of mostly cooked foods- including grains, potatoes, beans + legumes, vegetables, fruits, greens, pickled vegetables, herbs.... everything I want 🌿 healthy, humble, nourishing foods. And I have to give this way of eating credit. Many of you who have followed me throughout my raw veganism may disagree with me, but I can only share my experience, and this is a miracle to me, because for a long time I’ve thought that I would never get my period back. I also feel so much more physically strong, have a lot more freedom and variety with food, can enjoy cooking, have more options and opportunities to go out to eat and enjoy that.
My life no longer needs to revolve around eating the most clean diet, have the most lean body, having as low of body fat as I can, exercising as much as I can, having the most discipline... I am an emotional being. I am living a more full life. I am truly gaining my health back. I no longer want to be scared of gaining weight, of eating more calories, of eating more than just fruits, of missing a workout, of taking rest days.
I can be kind to myself, gentle with my body, have peaceful thoughts.
If you struggle with disordered eating, guilt over exercise and/or food, restriction, fear of weight gain or cooked food or fats or carbs or anything of the sort- reach out! Your life can be more than fear and guilt and self-punishment. Of course I’m still struggling mentally, still feel shame and guilt and sadness, but we must remember that true health and happiness is freedom 🕊💕
